Hello lovely guests,
I’m Wendy – chocolatier, chef, and founder of Tocumwal Chocolate School – and I’m so thrilled to be welcoming you for this very special afternoon, beautifully brought together by Elizabeth.

We’ll begin with a relaxed chocolate demonstration where I’ll show you how to make golden, crunchy honeycomb, then dip it in silky chocolate for that irresistible contrast of snap and melt. I’ll also share a quick tempering technique and guide you through making delicious chocolate bark using festive inclusions – perfect for Christmas gifting (or simply treating yourself!). Tastings and small gift bag of pre-made treats

Then it’s time to sit down together and enjoy a long, generous three-course lunch I’ve prepared for you:

Our house-specialty pork belly sausage roll with apple butter and a fresh green leaf salad

Trust in your chocolatier… a surprise sweet ending crafted by me
